Clover Club Cocktail

Summary:

One of the cocktail expert Crosby Gaige's "Hall of Fame" drinks of the pre-Prohibition era, the Clover Club was named in honor of a men's club at the Bellevue-Stratford Hotel in Philadelphia.

One variation of this drink is the Pink Lady, another an all-time classic. For a Pink Lady, use 1/2 ounce of applejack instead of sugar. Another variation substitutes 1/4 ounce of raspberry syrup for the grenadine.

Spirits columnist Jason Wilson wholeheartedly recommends making this drink with organic raw egg white, but a tablespoon of pasteurized egg white may be substituted.

Fill a tall mixing glass two-thirds with ice. Add the gin, grenadine, lemon juice and raw egg white. Shake vigorously for 30 to 60 seconds to form a good froth. Strain into a martini glass and serve immediately.
